"Pantry Raid" Energy Muffins

These muffins are SO versatile. Use whatever granola, oil/butter, and dried fruits you happen to have left in your pantry. Great for whipping up quickly when you don’t have time to make a special trip to the store! The chia seeds, dried fruits, and nut butter, supply your brain with valuable fiber, fat, and vitamins to kick start the day in the best way!
Pre heat oven to 350 degrees and prepare a muffin tin with paper baking cups or spray well with a Gluten Free spray.
Ingredients List:
½ Cup Marilyn’s GFG Flour 2 Flour all purpose mix
½ Cup Marilyn’s GFG Graham Cracker Crumbs
¾ Cup gluten free granola*
½ teaspoon GF xantham gum
½ Cup packed light brown sugar or coconut sugar
1 Tablespoon GF baking powder
2 Tablespoons chia seeds
1 large egg
1 Cup. almond milk or milk of your choice
½ Cup creamy peanut butter, almond butter, greek yogurt, or coconut oil**
2 Tablespoons vegetable oil**
1 teaspoon vanilla
1 Cup of dried fruit of choice
Method:
Use a large bowl to mix: all purpose flour mix, graham cracker crumbs, granola, xanthum gum, brown sugar, baking powder and chia seeds.
In a separate bowl, stir together:
Egg, milk, peanut butter, oil, and vanilla.
Add to flour mixture and stir in dried fruits
Stir until mixed, then let batter rest 5 minutes. Batter will be thin initially, letting it rest helps the moisture absorb into the batter. It will turn out to be light and spongy after the 5 minutes.
Spoon into muffin tin.
Bake 20 -25 minutes until center is set.

* Use your favorite granola! our favorite has coconut, almonds, and maple – YUM!
**If you are using coconut oil, you will not need the additional vegetable oil. But you will need to change the order of the ingredients around: cream together the coconut oil and brown sugar, then add the rest of the dry ingredients.
