Coconut and Nut Sour Cream Cake

Bake in preheated 350 degree oven

  • ¼ C butter or butter substitute such a Coconut oil
  • 1 Cup brown sugar
  • 2 eggs, lightly beaten
  • 1 C Gluten free flour mix
  • 1 teaspoon ground nutmeg 
  • 1 teaspoon baking soda
  • 1 C. sour cream ( or plain yogurt)
  • 1 cup shredded coconut
  • 1/2 C pecans or walnuts, chopped

Cream butter with brown sugar then add the eggs. Mix flour with nutmeg and add to egg mixture. Stir in sour cream and fold in the coconut and nuts.

Put mixture in to a greased 9 x9 pan, bake at 350 for 35 – 40 minutes or until done.
