Big Family Chocolate Chip Oatmeal Cookies Extraordinaire
(Not your Grandma’s cookies)

Moist cake like cookies enough for the whole family and a friend or two and they store well!

In a large mixing bowl cream together:

  • 1/2 unsalted butter
  • 1/2 C. nonfat plain yogurt
  • 1C canned pumpkin puree
  • 1 C sugar
  • 1 C brown sugar
  • 2 large eggs
  • 1 tsp Gluten Free vanilla extract

In a medium sized bowl mix together dry ingredients:

  • 2 C Marilyn’s Gluten Free Gourmet Multi-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp salt

Add to wet ingredients until blended.

Stir in:

  • 3 C uncooked Gluten Free oats
  • 1 C chopped walnuts
  • 12 oz bag of Gluten Free chocolate chips
  • 1C raisins or dried cranberries

Beyond the norm:
(For the bold try adding 2 tsp of curry powder–or for the truly daring add ¼ tsp chipotle powder instead)

Drop by teaspoon full on lightly greased cookie sheet. Bake at 350 degrees for 12-14 minutes.

Makes 50 cookies.
